Shrimp and Zucchini

Need a simple dinner that is low carb yet flavorful? Look no further than zucchini noodles and shrimp with cocktail sauce.

For the zucchini noodles you simply peel the vegetable and slice thin with a mandolin. Julienne into 1/4" thick noodles and toss into a boiling pot of water for :30-:45 seconds. Drain and top with shrimp and your favorite sauce.

I must confess I ate two plates and was still hungry. This led to the consumption of two bowls of rice and shrimp with a coctail sauce/Siricha mixture.
